Simple Tomato Consommee with Prawn Skewers
The perfect simple tomato consommee with prawn skewers recipe with a picture and simple step-by-step instructions.
- 150 g Cocktail tomatoes
- 0,5 liter Tomato juice
- 0,25 liter White wine (Riesling)
- 50 Milliliters Olive oil
- 1 branch Rosemary fresh
- 6 leaf Sage fresh
- 1 piece Peeled garlic clove
- 12 piece Prawn fresh
- Salt pepper
- Chilli red roughly chopped (dried)
- Basil leaves
- Halve the cocktail tomatoes.
- Heat the olive oil in a saucepan, sauté the cocktail tomatoes briefly.
- Add the sage, rosemary and garlic, roast for 5 minutes.
- Deglaze the cocktail tomatoes with Riesling, allow to reduce briefly.
- Add tomato juice and simmer gently for 30 minutes.
- Strain the soup through a fine sieve and return to the saucepan. Season to taste with salt and pepper.
- Let reduce for another 30 minutes over medium heat.
- Put 6 prawns on a wooden skewer and fry in olive oil. Season to taste with salt and a little chilli pepper.
- Serve the soup with prawn skewers and garnish with basil.
