Simple Tzatziki Variation

Ingredients for 4 servings:

  • 500 g yogurt, Turkish ‘Süzme’
  • ¾ cucumber(s)
  • 4 garlic cloves, peeled
  • 1 tbsp lemon juice
  • 2 tsp salt and pepper

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

Pour the yogurt into a bowl (it doesn’t need to be drained, as it’s already sour, hence the name “süzme”). Peel the cucumber, dice it very finely, or grate it, and add it to the yogurt. Press the garlic cloves through a garlic press and stir into the yogurt. Season with salt, pepper, and lemon juice. That’s it! You can serve the tzatziki immediately, but it tastes better if it’s refrigerated for an hour.
