Ingredients for 4 servings:

  • 6 garlic cloves
  • ½ cup olive oil
  • 4 m.-sized potatoes
  • some vinegar
  • some salt

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Skordalia

Boil the potatoes in their skins and then peel them. Peel the garlic cloves and chop them well in a blender. Then add the cooked potatoes and gradually add the oil until a thick paste forms. Add a tiny bit of vinegar and salt. Let the blender run for a moment longer. If the paste curdles, whisk it with a little warm water and thicken again.
