Simple vegetable soup

Ingredients for 2 servings:

  • 1 tbsp butter
  • 1 bunch of soup vegetables
  • 500 ml water, more if necessary – depending on the amount of soup vegetables
  • 1 tsp, heaped salt
  • ½ tsp black pepper, freshly ground
  • ½ tsp garlic powder, or soy sauce

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

vegetarian, quick and inexpensive, without ready-made broth

Cut the celery into small cubes, slice the carrots and leeks, and finely chop the parsley. Melt the butter in a saucepan and sauté the celery and carrots until soft. Then add the leeks (they don’t need as long as the other vegetables) until they’re soft. Add as much water as you like and add the parsley and all the seasonings. If you don’t like garlic, you can also use soy sauce. Simmer everything for about 5 minutes. I often serve it with a slice of bread. Note: This is a quick and, above all, inexpensive recipe that doesn’t require any ready-made broth.
