Six-grain cookies with maple syrup

Ingredients for 1 servings:

  • 200 g maple syrup
  • 120 g brown cane sugar
  • 100 ml water, hot
  • 460 g flour (six-grain or spelt flour)
  • 1 tsp cinnamon
  • 200 g butter
  • 1 pack of cake icing (punch donut icing), ready

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Boil the maple syrup in a saucepan until reduced by half. Dissolve the sugar in the hot water and let it cool slightly. On a board, rub the flour with cinnamon and butter until crumbly. Make a well in the mixture and pour in the sugar syrup. Knead into a dough and wrap in cling film. Chill for 30 minutes. Roll out the dough thinly and cut out cookies. Place on a baking sheet lined with baking paper and bake at 200°C for about 8 minutes. Warm the glaze and dip half of the cookies in it. Brush the remaining cookies with maple syrup and stick them together with the glazed cookies.
