  • 500 g pork fillet(s)
  • 2 tbsp flour
  • 3 onions
  • 80 g butter
  • 350 g mushrooms
  • 125 ml white wine
  • 250 ml whipped cream
  • salt and pepper

Instructions

Wash the meat under cold running water, pat dry, cut into wafer-thin slices, and dust with flour. Peel and dice the onions. Heat one-third of the butter, fry one-third of the diced onions and half of the meat for about 2 minutes, stirring frequently, then remove from the pan. Heat the second third of the butter, add the remaining meat and another third of the diced onions, cook in the same way, and keep the meat warm. Melt the remaining butter and fry the remaining diced onions in it. Clean the mushrooms, slice them, add them to the diced onions, and fry for about 5 minutes. Deglaze with white wine and cream, simmer gently for about 6 minutes. Season with salt and pepper, return the meat to the pan, let it heat briefly, and serve immediately.
