  • 150 g Frozen spinach leaves
  • 1 Onion red
  • 1 Pear red
  • 2 tsp Lemon juice
  • 250 g Mushrooms brown
  • 150 g Pasta (spirelli)
  • 4 tbsp Rapeseed oil
  • 200 g Beef fillet
  • 200 g Vegetable broth
  • 150 g Goat cream
  • 1 tsp Sugar brown
  • Salt and pepper
  • Freshly grated nutmeg
  • 6 Stems Parsley
  1. Cut the beef fillet into strips. Heat 2 tablespoons of oil in a large pan. Sear the meat all over, season with salt and pepper and remove.
  2. Cook the pasta in plenty of boiling salted water according to the instructions on the package.
  3. Thaw spinach. Peel the onion and chop coarsely. Halve, quarter, core and cut into thin slices, mix with lemon juice. Clean the mushrooms and cut into thick slices.
  4. 2 Tbsp oil in the pan and fry the mushrooms. Add onions and pears, fry briefly. Season with salt, pepper, nutmeg and sugar. Add the stock and simmer for 2 minutes. Squeeze out the spinach well, add to the pan with the goat cream and simmer covered for another 3 minutes.
  5. Drain the pasta, collecting 100 ml of the cooking water. Put the meat and pasta in the pan and mix in. If necessary, add a little pasta water, season with salt, pepper and nutmeg.
  6. Pluck the parsley leaves from the stems and roughly chop. Arrange sliced ​​meat with mushrooms and noodles on plates and serve sprinkled with parsley.
