Ingredients for 1 servings:
- 50 g butter
- 50 g sugar
- 130 g flour
- 1 egg(s), size S or 1 egg yolk
- ¼ tsp baking powder
- 100 g sour cream
- 50 g sugar
- 2 eggs, size S, alternatively 1 egg size XL or 1 egg size M plus 1 egg white
- 1 g vanilla, ground, approx.
- 10 g cornstarch or 1/2 pack vanilla sauce for cooking
- 400 g apples (approx. 2-3 apples)
- Butter for the mold

Preheat oven to 170°C (top/bottom heat). Grease a springform pan with a little butter. Soften the butter or melt it (in the microwave). Mix the flour with the baking powder (if you want to make it properly, sift the flour). First, add the softened/melted butter, then the egg, sugar, and flour with the baking powder to the mixing bowl and use the dough hook to mix into crumbles. Pour the crumble dough into the springform pan and press down, forming a rim of about 3-4 cm. Mix the sour cream, sugar, the remaining eggs (plus egg whites if desired), vanilla essence or flavoring, and cornstarch with a hand mixer. Wash, peel, core, and dice the apple. Arrange the cubes on the dough in the springform pan. Pour the sour cream and egg mixture over the apple pieces. Bake in the hot oven on the middle rack for about 50-60 minutes. Do the skewer test after 40-45 minutes, as every oven bakes differently. Notes: If you like, you can also make more crumble batter and pour it over the apples. The quantities, especially the egg count, are optimized for a small 18cm springform pan. For a 26cm springform pan, simply double the quantities. You’ll then need 1 egg (medium or large) for the batter and 3 eggs for the filling.
