Small Meat Pies with Green Beans
The perfect small meat pies with green beans recipe with a picture and simple step-by-step instructions.
For the filling:
- 350 g Chicken breast
- 2 Poles Spring onions fresh
- 50 g Bacon cubes
- 1 Clove of garlic
- 1 tbsp Butter
- 1,5 tbsp Flour
- 200 ml Chicken broth
For the dough:
- 100 ml Water
- 100 ml Milk
- 150 g Butter
- 1 tsp Salt
- 500 g Flour
- 2 Egg yolk
- 2 Flour
- 2 Butter
For the bean vegetables:
- 750 g Beans green fresh
- 80 g Butter
- 1 tbsp Salt
- 2 tsp Finely chopped savory
- 2 tsp Salt
- 2 tsp Pepper
- Cut the chicken breast into approx. 1 cm cubes, wash and clean the spring onions and cut into rings. Peel and chop the garlic and sauté in 1 tablespoon butter until translucent. Sweat 5 tbsp flour in it. Pour in the chicken stock while stirring and bring to the boil. Salt and pepper, simmer for about 10 minutes, let cool down a little. Mix with the other ingredients.
- Bring the water, milk and butter to the boil with salt. Pour the hot liquid into the flour and knead everything into a smooth dough. Let it get lukewarm, but then work quickly, otherwise the dough will be more and more difficult to work with. Roll out two thirds of the dough on flour 1/2 cm thick. Cut out 12 circles with a diameter of 2 cm larger than the indentations in the muffin tin. Grease wells with butter and line with batter so that it overlaps a little.
- Preheat the oven to 160 degrees top / bottom heat.
- Fill the pies three-quarters of the way with meat and sauce and beat the protruding edge of the pastry over it. Roll out the remaining dough and cut into 12 lids. Whisk the egg yolk, brush the edges with it. Put the lid on and press it on. Brush the lid with egg yolk. Put the pies in the oven and bake for 50-60 minutes until crispy. Let rest for 10 minutes in the switched off and open oven.
- In the meantime, clean the green beans and boil them in water with 1 tablespoon of salt, then drain. Melt the butter in a saucepan and add the other ingredients. Then add the cooked beans.
- Lift the pies out of the pan and serve with the beans.
- If there is anything left over … the pies also taste good cold and can also be frozen very well.
