Small Round Zucchini Pizzas; Vegetarian
The perfect small round zucchini pizzas; vegetarian recipe with a picture and simple step-by-step instructions.
- 1 Pc. Round yellow zucchini
- 2 tbsp Olive oil
- 6 tbsp Tomato sauce
- 200 g Mushrooms
- 1 tbsp Pizza seasoning
- 3 tbsp Parmesan
- First note: My zucchini was quite large; For smaller copies, it is better to use 2 pieces. Cut the zucchini into round slices approx. 1 cm in diameter. Rub a little oil all around. Place on a baking sheet lined with baking paper and bake in the preheated oven at 190 degrees top / bottom heat for about 5 minutes on the middle rack.
- In the meantime, cut the mushrooms into fine slices and grate the Parmesan. Take the tray out of the oven and turn the zucchini slices. Brush with 1 tablespoon of tomato sauce and top with the mushrooms. Sprinkle with pizza seasoning if you like. Spread the grated cheese on top and bake in the oven at the same temperature for about 10 minutes.
- Alternatively, you can prepare the zucchini pizzas in the pan. Then close the lid as soon as the topping is on so the cheese can melt.
- Instead of the tomato sauce, I used an onion-pesto-tomato spread and mixed it with 1 tablespoon of tomato paste and a little vegetable stock until creamy. Since it was very spicy, I didn’t need any other spices. But if you only use tomato strained, it is better to season with spices (salt, pepper, pizza seasoning, etc.) With yeast flakes instead of cheese, the whole thing becomes vegan. The pizzas taste warm and cold.
