Smoked duck breast with radish vinaigrette

Ingredients for 4 servings:

  • 10 radishes
  • 1 spring onion(s)
  • 15 g capers
  • 2 sprigs basil
  • 3 tbsp balsamic vinegar
  • 3 tbsp olive oil
  • Salt and pepper, black, from the mill
  • 1 small duck breast, smoked

Finely dice nine radishes. Finely chop the spring onion and basil leaves. Mix everything with the capers. Mix a vinaigrette of balsamic vinegar, salt, pepper, and olive oil and toss with the vegetables. Thinly slice the duck breast and arrange on plates. Cover with the vinaigrette. Thinly slice the 10th radish and garnish with the basil leaves. In summer, an ice-cold rose wine goes well with this dish.
