Ingredients for 2 servings:

  • 300 g pasta, short
  • 350 g smoked tofu
  • 4 large egg yolks
  • 150 ml cream
  • 2 handfuls of Parmesan, grated
  • 1 bunch of spring onions
  • 1 bunch of chives
  • n. B. Oil (peanut)
  • e.g. salt and pepper

Finely chop the chives. Cut the smoked tofu into strips about the length of the noodles. Clean the spring onions and slice them finely. Mix the egg yolk with the cream, Parmesan, and sliced ​​spring onions, and season generously with salt and pepper. Add the pasta to boiling salted water and cook until al dente. Meanwhile, heat peanut oil in a non-stick pan and fry the smoked tofu until golden brown, then add it to the egg and cream mixture. Drain the pasta, reserving some of the cooking water. Return the pasta to the hot pot, pour the cream, egg, and tofu mixture over it, and stir, adding more cooking water if desired. Serve on plates and sprinkle generously with the chives and, if desired, additional Parmesan.
