Smoked tofu with rice

Ingredients for 2 servings:

  • 200 g smoked tofu
  • 1 bag of rice or 2 servings of loose rice
  • salt water
  • 1 beefsteak tomato(s)
  • 1 zucchini
  • 2 cloves garlic
  • 2 tbsp tomato paste
  • some water
  • 1 handful of herbs (parsley, dill, chervil, chives, etc.)
  • 1 tsp vegetable broth
  • 2 tbsp oil

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 17 minutes

Cook the rice in salted water according to the package instructions. Meanwhile, chop the tofu, tomato, and zucchini into small pieces. Now add the oil to the pan, heat it up, and add the tofu. Add the garlic to the pan using a garlic press. Briefly fry everything. Meanwhile, mix the tomato paste with a little water, vegetable stock, and herbs in a small cup. Add the tomato and zucchini to the pan and continue to sauté. Just before the rice is done, add the contents of the cup to the pan, add a little salt and pepper, and heat everything in the pan until the rice is done.
