Smoked tofu with tomatoes and peppers

Ingredients for 4 servings:

  • 1 pack of smoked tofu
  • 1 onion(s)
  • 2 spring onions
  • 2 bell peppers, yellow and green
  • 125 g cherry tomatoes
  • 1 can of tomatoes, chopped
  • 2 tbsp Italian herbs
  • salt and pepper
  • Paprika powder, sweet
  • garlic powder
  • 5 tbsp olive oil
  • 3 tbsp Parmesan

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cut the tofu into cubes. Mix 3 tablespoons of olive oil with the Italian herbs, a little salt and pepper, and paprika, and marinate the tofu. Finely chop the onions. Finely chop the spring onions, bell peppers, and cherry tomatoes. First, sauté the onions, spring onions, and bell pepper pieces in the remaining olive oil for about 8 minutes. Then add the tofu and fry for about 3 minutes. Finally, add the cherry tomatoes and canned tomatoes and simmer for about 2 minutes. Mix the Parmesan cheese into the sauce and season with salt, pepper, and garlic. This sauce goes well with pasta, gnocchi, millet, rice, and other grains.
