Chinese noodles with vegetables

Ingredients for 3 servings:

  • 250 g Chinese egg noodles
  • 2 carrots
  • 1 stalk(s) leek
  • 200 g mushrooms (shiitake)
  • 2 bell peppers, yellow and red
  • 2 stalk(s) Celery
  • 2 garlic cloves
  • 3 tbsp oil (peanut oil)
  • Salt and pepper, from the mill
  • 4 tbsp soy sauce
  • 2 tbsp peanuts, salted
  • 1 handful of bean sprouts
  • 2 tbsp chives, finely chopped

Working time approx. 30 minutes; Total time approx. 30 minutes

Prepare the noodles according to the package instructions. Clean and wash the carrots, leeks, shiitake mushrooms, bell peppers, and celery. Peel the carrots and cut everything into thin strips. Peel and finely chop the garlic cloves, and sauté in the peanut oil. Add the vegetables and cook, stirring, until al dente. Season with salt, pepper, and soy sauce, and stir in the well-drained noodles. Roughly chop the peanuts and add them along with the bean sprouts and chives.
