Smokey's Cucumber-Apple-Avocado Salad Special

Ingredients for 2 servings:

  • ½ large cucumber(s)
  • 1 apple
  • 1 avocado(s), ripe but firm
  • 1 m.-large onion(s), red, cut into half rings
  • 2 handfuls of basil, roughly chopped
  • 1 tbsp parsley, finely chopped
  • 2 garlic cloves, squeezed
  • 2 tbsp sesame seeds, roasted without fat
  • 2 tbsp sunflower seeds, roasted without fat
  • 2 tbsp pine nuts, roasted without fat
  • 1 tbsp mustard, medium hot
  • 2 tbsp honey
  • 4 tbsp balsamic vinegar, lighter
  • 4 tbsp olive oil
  • Pepper, from the mill
  • Salt

Instructions

Working time approx. 20 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 35 minutes

Peel the cucumber, leaving a few strips of peel. Halve, core, and slice. Cut the apple into eighths with the skin, core, and slice. Dice the avocado. Mix everything in a bowl. For the dressing, whisk the mustard, honey, crushed garlic, balsamic vinegar, and olive oil until well combined. Then add the chopped parsley. Season with salt and pepper. Pour the dressing over the cucumber, apple, avocado, and onion mixture and mix gently. Then stir in the sesame seeds, sunflower seeds, and pine nuts. Finally, fold in the basil. Let it sit for about 10 minutes.
