Ingredients for 1 servings:

  • 1 m.-large zucchini
  • 1 tsp olive oil
  • 4 half tomatoes, dried, pickled
  • 1 garlic clove(s)
  • 1 tsp curry powder
  • a little chili flakes or freshly chopped chili pepper
  • 1 handful of basil leaves, roughly torn
  • 2 eggs
  • 1 tbsp butter
  • n. B. Pepper, freshly ground
  • n. B. Salt

Cut the zucchini into approximately 5 mm thick slices. Sear the zucchini slices in hot oil, add the chili flakes, crush the garlic, and evenly dust with the curry powder. Add the sliced ​​tomatoes. Reduce the heat slightly. Fry, stirring constantly, until they have taken on some color and are still firm to the bite. Before serving, stir in the basil and season with salt and pepper. Meanwhile, fry two fried eggs in another pan. Transfer the vegetables to a warmed plate and place the fried eggs on top.
