Smokey's Lentil, Pear, and Cheese Salad

Ingredients for 2 servings:

  • 100 g lentils, green (brown ones also work)
  • 100 g mountain cheese
  • 2 bulb(s)
  • 1 stalk of leek
  • a little lemon juice
  • 3 tbsp white wine vinegar
  • 2 tbsp rapeseed oil
  • 3 tbsp broth
  • 1 tsp mustard
  • Pepper, from the mill
  • Salt

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

light meal for hot days

Cook the lentils in plenty of water over low heat for about 20-30 minutes, not too soft. Drain and rinse with cold water. For the dressing, mix all ingredients well and season to taste. Cut the cheese into small cubes. Wash the leek thoroughly and cut into thin rings. Place both in a bowl, mix well with the lentils and the dressing, and let stand briefly. Cut the pears into thin wedges and immediately drizzle with lemon juice to prevent them from browning. Arrange the pear slices in a circle on two plates. Place the lettuce in the center of the pear slices.
