Ingredients for 12 servings:

  • 250 g flour
  • 160 g sugar
  • 250 g yogurt (lemon)
  • 100 ml oil
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp lemon peel
  • 1 egg(s)
  • Food coloring, blue, as needed
  • 200 g powdered sugar
  • 2 tbsp lemon juice

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Preheat oven to 160°C (fan assisted oven). In a bowl, combine flour, baking powder, and baking soda. In another bowl, whisk together egg, sugar, oil, lemon zest, and yogurt until frothy. Tint to a vibrant blue with blue food coloring and fold into the flour mixture. Pour batter into muffin tins and bake for 20-25 minutes. Let muffins rest for 5 minutes, then remove from the tins and cool on a wire rack. Mix powdered sugar with lemon juice to form a thick glaze. Cover the muffins with it, or pipe a topping of stiffly whipped cream on top.
