Snack mix with pecans, cranberries and honey

Ingredients for 1 servings:

  • 1 liter of cereal (spelled or oat snack), e.g. Düsis
  • 135 g oat flakes
  • 190 g pecans, coarsely chopped
  • 1 ½ tsp cinnamon powder
  • ¼ tsp salt
  • 115 g butter
  • 100 g whole cane sugar, light
  • 170 g liquid honey
  • 170 g cranberries, dried

Instructions

Working time approx. 6 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 41 minutes

Measure the cereal with a measuring cup. Add it to a large bowl with the oats, nuts, cinnamon, and salt and mix everything together. Melt the butter, sugar, and honey over low heat, stirring constantly. Pour over the snack mix and stir well to coat everything with the honey mixture. Spread out in a single layer on a rimmed baking sheet (approx. 38 x 26 cm) that has been greased with butter and lined with aluminum foil or parchment paper. Bake in an oven preheated to 160°C (top/bottom heat) for about 20 minutes on the middle rack. Turn over after about 10 minutes. Stir in the cranberries and bake for another 10 minutes. Immediately pour the snack mix onto a piece of parchment paper, spread it out, and let it cool completely. Store in a screw-top jar or tightly sealed tin for up to 5 days.
