Snacking peanuts with a Thai touch

Ingredients for 8 servings:

  • 50 g whole cane sugar, light
  • 2 limes, finely grated zest and juice
  • 2 tbsp fish sauce (Thai fish sauce)
  • 585 g peanuts, roasted, unsalted
  • salt and pepper

Instructions

Working time approx. 5 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Preheat oven to 160 degrees Celsius (325 degrees Fahrenheit). In a large bowl, combine the sugar, 2 tablespoons of lime juice (reserve the zest), and the fish sauce. Add the peanuts and toss to coat them completely. Line two baking sheets with parchment paper and arrange the nuts in a single layer. Bake, turning several times, until golden brown and fragrant, about 20 minutes. Transfer the peanuts (with the parchment paper) to a wire rack and cool for 10 minutes. Transfer to a serving dish and season with lime zest, salt, and pepper.
