Ingredients for 1 servings:

  • 2 eggs
  • 150 g sugar
  • 200 g desiccated coconut

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes

Coconut cookies, makes about 35 pieces

Combine the eggs and sugar. Add the desiccated coconut and mix well. Line a baking sheet with parchment paper and spoon small heaps of the mixture onto the baking sheet. Leave enough space between the cookies to allow them to spread during baking. Preheat the oven to 175°C and bake the cookies for about 10 minutes, until they turn a light yellow.
