Ingredients for 1 servings:

  • 4 eggs
  • 4 tbsp water
  • 150 g sugar
  • 1 packet of vanilla sugar
  • 100 g cornstarch
  • 1 tsp baking powder
  • 2 cups of cream
  • 1 can pineapple
  • 1 cup(s) eggnog
  • Desiccated coconut

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

My grandma’s recipe, makes about 18 pieces

Make a sponge cake batter from the first 6 ingredients and bake at approximately 180°C (350°F) for 10 minutes. Let cool. Crumble into a bowl. Whip the cream until stiff peaks form. Drain the pineapple well and chop it. Add the cream, egg liqueur, and pineapple to the cake crumbs. Mix everything together. Form into balls, roll in coconut flakes, and refrigerate to set. Serve in paper baking cups. Make 2-3 days in advance to allow them to set.
