Ingredients for 1 servings:

  • 500 g powdered sugar
  • 3 tbsp lemon juice
  • 75 g fat (vegetable fat)

Melt the fat in a saucepan over low heat with lemon juice and 2 tablespoons of water. Sift in 275g of icing sugar, bring to a boil, and stir until smooth. Remove from the heat. Stir in the remaining icing sugar. Knead the fondant while cold on a work surface dusted with icing sugar. As it cools, it will become firm and silky. Color with food coloring if desired. TIP: Wrap the fondant in cellophane to keep it soft. If it becomes too hard, heat it in the microwave at 30% defrost setting in 20-30 second intervals and knead for 5 minutes.
