Ingredients for 4 servings:

  • 210 g butter
  • 210 g flour
  • 60 g powdered sugar
  • ½ lemon(s), zest
  • 2 egg yolks
  • Flour for the work surface
  • 2 egg whites
  • 180 g powdered sugar
  • e.g. jam or marmalade

Instructions

Working time approx. 50 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 12 minutes; Total time approx. 2 hours 2 minutes

Cookies to cut out

Add small pieces of butter to the flour. Add the powdered sugar, grated lemon zest, and egg yolk, and quickly knead into a dough. Let the dough rest in a cool place, then roll it out thinly with flour. Cut out hearts. Beat the egg whites until stiff peaks form, then stir in the powdered sugar with a spoon. Brush the hearts with the beaten egg whites. Place on a greased or parchment-lined baking sheet and bake at medium heat until golden brown (approx. 150°C fan-assisted oven for approx. 12 minutes). Combine the cooled hearts with jam or preserves, egg white sides facing out.
