Snow peas – basil – salad

Ingredients for 4 servings:

  • 300 g sugar snap peas
  • 300 g carrot(s)
  • 2 bunches of basil
  • 30 g pine nuts
  • 2 cloves garlic
  • 2 tbsp balsamic vinegar
  • 6 tbsp olive oil
  • salt and pepper
  • Sugar

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Clean the snow peas and blanch them for about 3 minutes. Clean, peel, and thinly slice the carrots. Roast the pine nuts in a dry pan until lightly browned. Pick the basil leaves. Peel and press the garlic, mix with the vinegar, salt, and a pinch of sugar, then add the olive oil. Combine all ingredients with the vinaigrette.
