Luxury chocolate mousse

Ingredients for 8 servings:

  • 3 bars of dark chocolate (at least 50% cocoa)
  • 6 eggs, including the egg whites, beaten stiffly
  • 6 eggs, including the yolk
  • 300 ml cream
  • 45 g vanilla sugar

Instructions

Working time approx. 30 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 30 minutes

Beat the egg yolks with the vanilla sugar until the mixture becomes lighter in color, about 15-20 minutes. Meanwhile, melt the chocolate in a double boiler. Beat the egg whites with a pinch of salt until stiff peaks form. Whisk the cream until stiff peaks form. Then pour the melted (not too hot) chocolate onto the sugar and egg yolk mixture and mix with a whisk. Then fold in the egg whites. Finally, fold in the cream. Refrigerate for about 2-3 hours. This goes very well with a fruit salad made from strawberries flavored with orange sugar.
