Ingredients for 2 servings:

  • 1 kg potatoes, floury
  • 1 egg yolk
  • 1 tbsp flour
  • 1 tbsp potato flour
  • 2 tsp salt
  • nutmeg

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Dumplings made from boiled potatoes – Saarland style

Boil the potatoes in their jacket potatoes, let them cool completely (e.g., overnight). Pass them through a food mill, then mix with the remaining ingredients. Form small dumplings (slightly larger than a ping-pong ball). Let them rest in boiling water for 10 minutes. It’s best to make a test dumpling; if it falls apart, you need more flour.
