Ingredients for 2 servings:
- 300 g soba noodles, approx. 3 bunch
- 200 g beef fillet steak(s)
- 2 garlic cloves
- 4 spring onions
- 1 chili pepper(s), fresh, red, hot
- 4 tbsp sesame oil
- 4 tbsp soy sauce
- 2 tbsp maple syrup
- 1 lime(s)
- 1 tsp coriander powder
- ½ can cashew nuts, roasted and salted
- 1 bunch of parsley
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes
Cut the steak into thin strips. Finely slice the spring onions, separating the white and green parts. Chop the garlic cloves. Roughly chop the cashews. Deseed the chili pepper and cut into thin strips. Wash the lime in hot water and zest it. Squeeze out the juice. Chop the parsley. Mix a sauce from sesame oil, maple syrup, soy sauce, coriander powder, lime zest, lime juice, and chili. Cook the soba noodles in boiling water for about 6 minutes. Meanwhile, sear the steak strips in a little oil for 3-4 minutes. Add the garlic and white parts of the spring onions and fry, then reduce the heat. Deglaze with the prepared sauce. Once the noodles are cooked, drain and mix into the sauce with the meat. Briefly stir in the green parts of the spring onions, cashews, and parsley and serve immediately.
