  • 1 tbsp butter
  • 1 pinch of salt
  • 1 egg white
  • Breadcrumbs
  • n. B. ham
  • n. B. cheese
  • e.g. tomato sauce
  • e.g. Béchamel sauce
  • n. B. vegetables
  • oil

Ingeniously simple and delicious from Bella Italia

Bring the milk, butter, and salt to a boil, then immediately stir in the flour vigorously with a wooden spoon to avoid lumps. Let the smooth dough cool. Roll out the dough thinly with a rolling pin and cut out round circles. Fill with cooked ham, cheese, tomato sauce, béchamel sauce, or vegetables, for example. Fold into half-moons and press the edges firmly together. Brush with egg white and coat in breadcrumbs. Fry in hot oil until golden brown, and the “sofficini” are ready.
