Ingredients for 3 servings:

  • 1 cup dry white wine
  • 100 g tomatoes, dried
  • 1 tbsp extra virgin olive oil
  • 2 tbsp black olives, pitted, halved
  • ½ tsp chili flakes
  • 1 can of tomatoes (pizza)
  • 1 onion(s), peeled, halved, cut into strips
  • 2 garlic cloves, sliced
  • 1 pinch of sea salt
  • 1 pinch of pepper, freshly ground
  • 1 pinch(s) of sugar
  • Herbs, fresh or frozen

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

made from dried tomatoes with black olives

Soak the sun-dried tomatoes in the wine overnight, then drain and finely chop. Sauté the onions in a pan with a tablespoon of olive oil, then add the sun-dried tomatoes, garlic, and chili flakes and sauté briefly. Now add the olives and canned tomatoes, along with a pinch of salt and sugar. Stir and simmer gently at 0.5°C. Finally, add the herbs and let the sauce simmer without heat. Season again with salt and freshly ground pepper, if desired. Perfect with pasta, grilled dishes, fried potatoes, rice, etc.
