Ingredients for 2 servings:
- 130 g sugar
- 50 g margarine, vegan
- 1 pinch of salt
- 1 packet of vanilla sugar
- 300 ml soy cream (Soy Cream Cuisine)

Working time approx. 5 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 30 minutes
Caramel Fudge, simple and vegan
First, melt the margarine in a pan (preferably nonstick). Add the sugar, vanilla sugar, and salt and let it melt. Then pour the cream into the pan and whisk until there are no lumps. Simmer on medium heat for about 25 minutes, stirring regularly. It should really simmer continuously (without a lid!). Once the mixture turns a light caramel brown, pour it into a small baking dish lined with aluminum foil, or simply tip it onto a large piece of aluminum foil and refrigerate. After 1-2 hours, the caramel is ready to cut and eat.
