- I love soft ice cream – and to be honest – as soon as I see such a machine in the so-called system restaurants – one thing is clear – today there is soft ice cream :). So that I don’t have to go on a long search, I started trying it out at home and finally came up with the following – for me the perfect soft ice cream recipe. It turned out wonderfully creamy and fluffy.
- It is important for the production of soft ice cream that you use all ingredients pre-cooled.
- First, mix the cream and honey together well. I personally do it with a stand mixer. An equally good result can of course be achieved with a hand mixer. It just takes a little longer because it isn’t that powerful.
- In the next step, the eggs (4 egg yolks and two whole eggs) and salt are added. Mix well again.
- IMPORTANT >>>>> The mass must not stop but must be filled into the ice machine immediately. <<<<<<
- Now stir the soft ice cream according to the instructions for the respective ice cream machine.
TIP
- From the remaining protein e.g. Make coconut macaroons. Or see my recipe >>>> Meringue or also called meringue >>>> Simply adjust the ingredients. Or just whip and top with vanilla pudding.
- By the way, you can also use the base of the soft ice cream as a topping for muffins. Simply put it in an ISI and use it to refine the muffins.
