Ingredients for 2 servings:
- 100 g salami, cut into fine strips
- 100 g ham (toast ham), cut into fine strips
- 1 onion(s), finely chopped
- 1 bell pepper(s), finely sliced
- some tomato paste
- 2 carrots, cut into fine strips
- ¾ liter beef broth
- 1 pinch of salt
- 1 pinch(s) of pepper
- 2 lemon(s) – slices, freshly cut
- 1 tbsp mixed herbs (dill, parsley, celery greens etc.), chopped
- 4 tbsp sour cream
- some lard or oil for frying
- ¼ liter cucumber juice
- 2 gherkins, cut into fine strips
Instructions
Working time approx. 25 minutes; Total time approx. 25 minutes
Ukrainian soup Austrian style
Cut the salami and ham into thin strips and sear in hot lard or oil. Add the finely chopped onion. Then add the julienne strips of bell pepper, carrots, and gherkins. Immediately pour in the beef broth and pickle juice. Add a little tomato paste and the herbs and simmer for about 30 minutes, until the vegetables are tender. Season with salt and pepper. Serve on two plates, garnished with a lemon slice and about 2 tablespoons of sour cream.
