Solyanka according to grandma's recipe

Ingredients for 8 servings:

  • 1 kg sausage (ham, salami, Lyoner etc.) cut into strips
  • 4 large onions
  • 2 jar bell pepper(s), (cut into strips) or fresh
  • 6 large cucumber(s), sour
  • 1 tube(s) Tomato paste
  • Tomato ketchup
  • 2 tbsp instant meat broth
  • salt and pepper
  • 3 garlic cloves
  • Toast, according to the number of people
  • whipped cream
  • parsley (chopped)
  • Paprika powder, hot

Instructions

Working time approx. 1 hour; Total time approx. 1 hour

Place the sausage, onion, and sliced ​​cucumber in a large pot, season with salt and pepper, and fry. Add the tomato paste and ketchup, then fry briefly while stirring. Add the garlic, crushed through a garlic press. Season with meat broth and add water to taste (approx. 1.5 to 2 liters). Then add the paprika. You can use the cucumber or paprika broth, but use less water. Simmer for 20 minutes and then season generously with salt, pepper, and paprika. It’s best to let the solyanka rest overnight so it can develop its full flavor. Heat the solyanka briefly and season again if necessary. To garnish: Place the solyanka on a deep plate or in a small bowl, place a dollop of whipped cream in the center of the solyanka, and sprinkle with parsley. Serve with a slice of freshly toasted toast.
