Soup Deposits: Semolina and Bacon Dumplings

Ingredients
 

  • 1 L Strong meat broth, homemade of course
  • 75 g Streaky bacon, finely diced
  • 1 Small onions, finely diced
  • 0,25 L Milk
  • 1 tbsp Butter at room temperature
  • 1 pinch Salt and pepper, grated nutmeg.
  • 1 Free range eggs
  • 80 g Durum wheat semolina
  • 30 g Breadcrumbs - if necessary -
  • 1 tbsp Chopped parsley

Instructions
 

  • Peel the onion, chop it very finely and fry it with the bacon cut into small cubes in a large saucepan. Pour milk on top. Stir butter, spices and semolina into the boiling mixture and stir until the mixture contracts. Put the saucepan aside and allow to evaporate, only then add the egg and breadcrumbs if necessary. Shape it into long dumplings with a tablespoon, add them to the simmering meat soup, turn down the hob and finish cooking the dumplings in 10 to 15 minutes. Sprinkle with parsley and serve.
