Soup with Wild Garlic Patties
The perfect soup with wild garlic patties recipe with a picture and simple step-by-step instructions.
Consommé
- 500 g Soup bones
- 0,5 Pc. Leek
- 1 Pc. Onion
- 1 Pc. Carrot
- Lovage
- Fresh celery
- Bay leaf
- Peppercorns
- Salt
Wild garlic patties
- 250 ml Milk
- 2 Pc. Eggs
- 2 tsp Wild garlic pesto
- Chopped parsley
- Salt and pepper
- 140 g Flour
- 1 shot Oil
Consommé
- Cover the soup bones with cold water and bring to the boil. Then skim off the foam and fill it with water again and again. Add all ingredients and simmer for a few hours. Then sift through the soup. Chop a carrot and the kohlrabi and add them. Season with salt and pepper, chop the chives and parsley and add in the same way.
Wild garlic patties
- Mix the ingredients into a dough and leave to rest for a while. Heat a pan with a little fat and fry the dough in portions to make pancakes. After cooling, cut into thin “flädle” (strips). Then add to the consommé and serve.
