Soups: Franconian Soul Warmer – Beef Pot with Lots of Vegetables

  • 750 g Beef
  • 1 piece Onion
  • 2 piece Garlic cloves
  • 2 bunch Spring onions fresh
  • 10 piece Mushrooms brown
  • 30 g Butter
  • 2 tablespoon Extra virgin olive oil
  • 2 tablespoon Flour
  • 250 ml Vegetable broth *
  • 3 piece Tomatoes
  • 2 piece Bay leaves
  • 4 piece Allspice grains
  • 1 piece Carrot
  • 1 piece Parsnip fresh
  • Salt and pepper
  1. Peel and dice the onion and garlic. Cut off only the whites approx. 2 – 3 cm from the spring onions. Clean the mushrooms. Cut the beef into thin small slices (gyros style).
  2. Heat the butter and oil in a saucepan and sauté the onion and garlic cubes as well as the spring onion pieces and the mushrooms. Remove and set aside.
  3. Sear the meat in portions in the same saucepan.
  4. Put the whole meat in the saucepan, dust with flour and add the onion, garlic and mushroom mixture. Pour in the broth, add the bay leaves, the crushed allspice grains and the skinned and quartered tomatoes, close the lid and let the whole thing simmer slowly for about 1 hour.
  5. Peel the carrot and parsnip and cut into slices or cubes.
  6. Bring the stew to the boil, stir in the carrot slices and diced parsnips, switch off the stove and let the vegetables cook with the residual heat.
  7. Season to taste with salt and pepper and serve with a piece of white bread, baguette or ciabatta and a couple of spring onion rings.
