Koenigsberger Style Meatballs with Mushrooms and Pods
The perfect koenigsberger style meatballs with mushrooms and pods recipe with a picture and simple step-by-step instructions.
- 500 g Organic ground beef
- 2 piece Organic eggs
- 3 piece Garlic cloves chopped
- 1 piece Chopped onion
- 3 Discs Crispbread
- 2 piece Carrots
- 1 tbsp Homemade vegetable broth
- 1 tsp Cayenne pepper
- 2 tbsp Mustard medium hot
- 125 g Butter
- 3 tbsp Freshly ground flour
- 200 g Sour cream
- 1 Glass Capers
- 10 Cut mushrooms
- 2 handful Cut pods
- 2 piece Bay leaves
- Allspice grains
- Juniper berries
- 1 tbsp Salt
- 1,5 liter Filtered water
Minced meat mass
- Put the minced meat in a bowl, crack the eggs and add them. Peel the onion and the garlic cloves, cut them into small pieces and place in the bowl. Peel and grate the carrots, then chop up the crispbread slices (had to be used as a substitute for breadcrumbs as I don’t have any old rolls) and add to the minced meat. Add the vegetable stock or salt, the cayenne pepper, the mustard and mix everything well, then leave the dough covered for a while.
To the broth from which the sauce is made …
- In the meantime, put a saucepan half full with water to heat it up, add 1 tablespoon of salt, the bay leaves, allspice and juniper berries to the boil. While the water is warming up, I formed the dumplings and they then come into the boiling water, now just let the dumplings stand for about 20 minutes.
- Then take the dumpling out and set it aside. Now put the butter in a pan or saucepan and melt it, freshly grind the flour, add it and sweat it out, then pour the broth over it and stir well. Now stir in the cream and add the capers. (Unfortunately I did not mix the sauce with the cream well, but since the capers were already in, mixing was no longer possible, so that small cream flakes are in the sauce, next time I will know :)))
- Place the dumplings in the sauce and let them steep for a while. Then I removed half and frozen it. Now add the mushrooms and the pods to the sauce, heat everything up again. And during this time I finished cooking the rice in the rest of the broth that I soaked the night before, since wild rice takes a long time to cook, so the rice had a good taste, but you can also cook it in water.
- As a decoration on the rice, I put some radish seedlings that grow on my kitchen window over it 🙂
