The perfect soups & stews: layered vegetable stew recipe with a picture and simple step-by-step instructions.
- 1 size Onion
- 1 tbsp Coconut fat “mild”
- 4 piece Carrots
- 4 size Potatoes
- 1 pole Leek
- 1 small White cabbage
- 2,5 liter Water
- 6 tbsp Homemade vegetable broth
- Stock powder
- 2 tbsp Oleolux *
- Peel, wash and cut the carrots – peel the potatoes, wash and cut into cubes – clean the leek well and first halve and then cut the stick – halve, quarter and cut the cabbage – peel the onion and cut into small pieces.
- In a soup pot, sauté the onions with the coconut oil. Then the sliced carrots, the diced potatoes, the sliced leek and the sliced cabbage are added in layers.
- Sprinkle the homemade vegetable stock over it and just pour water over the whole thing, put the lid on and bring the whole pot to a boil, cook for about 30 minutes, then switch off and let it steep for about 1 hour.
- Now before the soup is served, stir in the Oleolux, stir it vigorously and then just enjoy … a nice hot soup … and who likes to add a little more pepper 😉
