Sour bean vegetables among themselves

Ingredients for 4 servings:

  • 1 kg beans, sour pickled green beans
  • 500 g potatoes cut into cubes
  • 2 large onions, diced
  • butter
  • 400 ml vegetable stock
  • 8 slices of Kasseler or Mettwurst (depending on size)
  • savory
  • salt and pepper
  • possibly bacon, lean

Working time approx. 30 minutes; Total time approx. 30 minutes

Chopped beans with potatoes

The pickled beans can be very sour. If you don’t like them sour, you should boil the beans in water once and then drain the water. First, peel the potatoes. They are then diced straight away and boiled like boiled potatoes. Then drain and roughly mash them with a potato masher. Sauté the diced onions in butter (if you like, you can also fry some diced lean bacon with them). Place the pickled beans in a large pot and bring to a boil briefly. Stir the potatoes and onions into the beans. Top up with vegetable stock if needed (do not let it become too runny). Add a little savory. Add the Mettwurst / smoked pork slices and let them simmer. Finally, season with a little more salt and pepper, if desired. Caution: Always stir well over low heat to prevent burning!
