Ingredients for 4 servings:
- 2 chicken breast fillets (double), 300 g each
- 1 lemon(s), untreated
- 30 g butter
- 100 g cheese (Gouda), medium-aged
- 3 tbsp breadcrumbs
- 40 g hazelnuts, ground
- 6 peach(s), halved, from the can
- 2 tsp curry
- 200 g crème fraîche
- Salt
- pepper
- Chervil or parsley
Instructions
Working time approx. 40 minutes; Total time approx. 40 minutes
Open the washed chicken breast fillets (do not cut them apart). Grate the lemon zest and squeeze out the juice. Drizzle the chicken breast fillets with lemon juice and let stand for 10 minutes, pat dry, and season with salt and pepper. Brown the chicken breast fillets in a little butter. Grate the cheese and mix it with the breadcrumbs and nuts. Cut the peach half into wedges. Stuff the chicken breast fillets with a few peach slices and place them in a greased baking dish. Arrange the remaining peach slices on top, sprinkle with the lemon zest, and sprinkle with curry powder. Then spread the cheese mixture over the top and spread with the crème fraîche. Bake in a preheated oven at 200°C for about 20 minutes. Sprinkle with the herbs and serve with rice.
