Ingredients for 2 servings:

  • 500 g green beans
  • ½ onion(s)
  • 2 tbsp diced ham
  • 2 tbsp ajvar
  • 1 ½ tbsp apple cider vinegar
  • 1 piece(s) sugar cube
  • 2 garlic cloves
  • 200 ml vegetable stock
  • pepper
  • nutmeg
  • Café de Paris (spice)
  • 4 dumplings as desired
  • 1 tbsp olive oil

Working time approx. 40 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 10 minutes

Chop and wash the beans. Dice the onion. Heat the olive oil in a pan and sauté the diced onion and ham until translucent. Now add the beans and immediately add the vinegar and sugar cubes and stir to combine. Add all the spices: pepper, nutmeg, Café de Paris, crushed garlic cloves, and ajvar; stir everything together and deglaze with the vegetable stock. Let the vegetables simmer over low heat until the beans are tender but still firm to the bite. This takes about 20 minutes. In the meantime, prepare the desired dumplings. We love to serve them with bread dumplings, which I usually prepare in advance and take out of the freezer. Originally, potato dumplings were used with sour beans. However, all types of dumplings go well. When the beans are cooked to your liking, give everything a final seasoning. I like to add a little more vinegar, as the sour flavor goes very well with the dumplings. Arrange the beans together with the dumplings in deep plates and serve.
