Sour eggs without bacon

Ingredients for 4 servings:

  • 8 eggs
  • 500 g potatoes
  • 4 tbsp green spelt meal
  • 3 tbsp flour
  • 250 ml water or broth from cooking the potatoes
  • 500 ml milk
  • 3 bay leaves
  • 1 tsp salt
  • ½ tsp pepper
  • 2 tsp brown sugar
  • n. B. vinegar
  • 2 ½ tbsp butter for frying

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Peel and boil the potatoes. Hard-boil the eggs in a separate pan. Meanwhile, melt the butter in a large pan, stir in the green spelt groats, and sauté briefly. Add the flour and sauté briefly. Pour in 250 ml of the stock from the potatoes, or alternatively water, stir vigorously, and add the milk. Add salt, pepper, sugar, and bay leaves, and bring to a boil. Simmer gently for 10 minutes over the lowest heat. Peel the eggs and add them to the sauce along with the potatoes. Serve the dish, adding vinegar to taste once on the plates.
