Ingredients for 4 servings:

  • 1 kg potato(s), waxy
  • 1 onion(s)
  • 80 g butter
  • 100 g flour
  • 800 ml water
  • 1 pinch of salt
  • 4 tbsp vinegar
  • 1 clove(s)
  • 2 bay leaves

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 55 minutes

Upper Swabian potato specialty

Boil the potatoes with their skins on. Make sure they aren’t overcooked, as this will make further preparation easier. Peel and slice thinly. Melt the butter in a hot pan and make a roux with the onions and flour. Once lightly browned, add water. Add the vinegar, bay leaves, and cloves and simmer for 25 minutes. Then remove the cloves and bay leaves and simmer the potato slices for a few minutes. This Swabian delicacy tastes best with sausages and/or traditionally with spaetzle.
