Ingredients for 8 servings:
- 2 ½ liters of water
- 300 g beef
- 2 carrots
- 2 parsley roots
- ¼ celery root
- 1 large onion(s)
- 150 g white cabbage
- 100 g peas or beans
- 2 large potatoes
- 2 m.-large tomato(s)
- 1 m.-large bell pepper(s), red
- 2 cloves garlic
- 2 tbsp oil
- 2 bay leaves
- 1 heaped tbsp tarragon, pickled, if not available add tarragon to taste.
- e.g. salt and pepper
- n. B. Dill
- n. B. Lovage
- e.g. vinegar or lemon juice
- e.g. parsley

Working time approx. 45 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 25 minutes
Ciorba
Wash the meat and cut into small cubes. Peel and finely chop the onion, and wash and finely chop the vegetables. Sauté everything in oil, add the garlic and bay leaves. Pour in water and simmer gently until soft. Finally, finely chop the herbs, add salt and pepper, and season with vinegar or lemon juice.
