  • 10 sprigs of tarragon
  • n. B. Salt
  • n. B. vinegar

Instructions

Working time approx. 1 hour; Rest period approx. 1 day; Total time approx. 1 day 1 hour

for seasoning soups

Wash the fresh tarragon stalks, then pick the leaves. Place the leaves in a bowl, season well with salt, and let stand, covered, for a day. Place the leaves in a preserving jar, bring the vinegar to a boil, and pour over the tarragon until it is covered. Seal the jar.
