Ingredients for 1 servings:
- 500 g wheat flour type 550
- 100 g sourdough (wholemeal sourdough), dried
- 10 g baking malt
- 10 g salt
- 60 g olive oil
- 42 g yeast, fresh
- 160 ml buttermilk
- 160 ml whole milk, fresh
- 1 egg(s), size L
- 40 g white sugar
Instructions
Working time approx. 30 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 15 minutes; Total time approx. 2 hours 45 minutes

Heat the milk and buttermilk to approximately 32°C. Now add the yeast and sugar and let rest for 5 minutes. Place all ingredients in a bowl and knead well for 10 minutes. The dough should be smooth and not sticky. If the dough is too stiff after about 5 minutes of kneading, add a tablespoon of water every now and then while stirring. If it’s sticky, add a little flour. Once the dough is nice and smooth, cover and let rest for one hour. After an hour, weigh the dough and divide it into 10 equal pieces. Form them into round balls, place them on a baking sheet, and let them rest, covered, for another hour. Preheat the oven to 200°C and bake for about 15-20 minutes, until they are the brown color you like.
