Sous Vide Spiral Potatoes
The perfect sous vide spiral potatoes recipe with a picture and simple step-by-step instructions.
- 4 piece Peeled potatoes mainly waxy
- 2 tbsp Olive oil
- 1 pinch Sea salt from the mill
- 1 pinch Black pepper from the mill
- 1 pinch Cayenne powder
- 1 pinch Freshly grated nutmeg
- My 500 recipe. Dedicated to my longtime friend Schneerose. So extra without garlic. Use the spiral (first picture) to cut long spirals out of the potatoes.
- In a bowl, season the potato spirals with salt, pepper, cayenne pepper, nutmeg and the olive oil and marinate.
- Divide the marinated, seasoned potato spirals between two vacuum bags and vacuum seal tightly.
- Now cook the vacuum bags in the combi steamer (combi steamer) at 100% steam for 6 minutes.
- Use the spiral potatoes immediately as a side dish to a dish of your choice.
- Tip 6: If many guests are expected, they should be deterred after steaming in ice water. Then shortly before serving, fry them in a little fresh butter or seasoned butter of your choice until they are more or less crispy (depending on your taste).
- This potato side dish (anyone can change the spices according to their taste) is well received by guests because potatoes are sometimes “different”. We like them crispy fried with a delicious steak.
