South African malva pudding

Ingredients for 4 servings:

  • 200 g sugar
  • 2 eggs
  • 1 tbsp apricot jam
  • 150 g flour
  • 1 tsp baking soda
  • 1 pinch of salt
  • 150 g butter
  • 1 tsp white wine vinegar
  • 100 ml milk
  • 5 ml baking powder
  • n. B. Vanilla flavor
  • Fat for the mold
  • 200 ml cream
  • 100 g butter, soft
  • 150 g sugar
  • 100 ml water, warm

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour

Grease a baking dish and preheat the oven to 180°C (top/bottom heat). Meanwhile, cream the sugar and butter until fluffy and add the jam. Then slowly add the flour, baking powder, and baking soda. Melt the butter in a saucepan and add it to the batter along with the vinegar. Then stir in the milk. Pour the batter into the baking dish and bake at medium heat for 40 minutes, until a nice brown crust forms. While the cake is baking, melt the ingredients for the sauce in a saucepan and pour it over the warm cake after baking. The sauce will absorb well. Serve the mallow pudding with vanilla ice cream or vanilla sauce. Tastes delicious, just like in South Africa.
